Mashed potatoes are such a delicious side dish but the carbs can be horrific! Using cauliflower as a replacement makes for a delicious low-carb substitute! Go ahead… eat up! =)
Mashed Cauliflower
Makes 4 servings
Ingredients:
- 2 heads cauliflower, washed and cut into large pieces
- 2 tablespoons of butter (or the like)
- 1/2 teaspoon sea salt
Directions:
- Steam the cauliflower pieces until very tender
- Puree cauliflower in a food processor or mixer, add in buttery spread and salt
- Reheat in a casserole dish in the oven at 350° for 20 minutes
- Serve
